This coffee is delicious as a black drink it is so very sweet and friuty, can be accompanied by milk too.
This coffee is selected from the villages in Parami at around 1800 MASL. The main varietals are; Hybrido de Timor, Typica. Timor-Leste is a really interesting coffee origin, it is relatively new in terms of coffee. The country have their own economic difficulties due to the main source of income for the country, the oil reserves, drying up.
The coffee is largely sold on the C Market; 37% of households in Timor- Leste depend on coffee for their income. This is why I love to work with Raw Material, they aim to encourage better standards and practice at the processing stations in order to get the coffee to get into the specialty market where people can enjoy a much less volatile market in which to sell their produce. They do this by improving Ermera’s coffee quality given the unique set of challenges facing the region. Each section of the plan uses materials that are local and readily available.
